Huckleberry Dessert

Here is a great recipe for all of you huckleberry lovers out there, and I know there are a lot of you up here in Bonners Ferry!

Ingredients:
1 c. flour
5 T. Powdered sugar
½ c. butter
1½ c.sugar
3 eggs
¼ tsp. salt
1 tsp. vanilla
¼ c. flour
1 tsp. baking powder
½ c. chopped nuts
2 c. huckleberries

Directions:

Mix together the first three ingredients and press into bottom of an 8X12 inch pan. Bake at 350° for 15 minutes. Cream the next six ingredients together. Fold in the nuts and huckleberries. Spread on crust and bake thirty more minutes. Serve with whipped cream or ice cream.

NOTE: This recipe is from an updated 1914 Bonners Ferry Cookbook. It is equally delicious with rhubarb.
