Huckleberry Griddle Cakes Recipe
Ingredients for Huckleberry Griddle Cakes Recipe
1/2 pint huckleberries (blackberries or raspberries can be substituted as desired)
1 1/2 pints flour
1 tsp. salt
1 Tbsp. brown sugar
2 tsps. baking powder
2 eggs
1 pint milk
Instructions
Sift together flour, sugar, salt, and powder.
Add beaten eggs, milk, and huckleberries (washed and picked over).
Mix into batter that will run from pitcher in thick, continuous stream.
Have griddle hot enough to form crust as soon as batter touches it.
